4 skinless, boneless breast halves
1 Tbsp veg oil
2 cups sliced mushrooms (10-12)
2 Tbsp butter
salt and pepper
paprika
8 slices bacon, cooked
1 cup monterey jack cheese
1 cup cheddar cheese
2 tsp fine parsley


Honey Mustard Marinade:
1/2 cup Grey Poupon mustard
1/2 cup honey
1 1/2 tsp veg oil
1/2 tsp lemon juice

Directions:
Directions:
Mix together marinade ingredients using electric mixer for 30 seconds. Pour 2/3 of marinade over breasts - cover - refrigerate for 2 hours. Preheat oven to 375. Sear breasts in frying pan with oil. Remove from heat. Saute shrooms in butter in small frying pan. Season the chicken. Spray baking dish, and layer in chicken breasts, bacon, shrooms, remaing marinade and cheese. Bake 7 - 10 min. Remove from oven and sprinkle with parsley before serving.
