Fresh Corn - 2 Ears
Red Onion - 1/4 Cup finely chopped
Black Beans 15 oz Can drained & rinsed
Jalapeņo - 1 fresh chopped
Red Bell Pepper - 1/2 Cup chopped
Cilantro - 1/4 Cup chopped
Olive Oil - 1 Tbsp
Lime Juice - 2 Tbsp fresh squeezed
Chili Powder - 1 tsp
Cumin - 1/2 tsp

Directions:
Directions:
Grill the corn, let cool then cut kernels off and add to a bowl. Add onions, beans jalapeņo, red pepper and cilantro to the corn. In separate bowl, combine oil, lime juice, chili powder and cumin. Whisk well and pour over corn mixture and stir well. Cover with plastic wrap and place in fridge for at least 3 minutes, over night is best. Stir before serving. Great with tortilla chips.
