4 Tbsp olive oil
1 cup chopped onion
2/3 cup chopped carrot
6 cloves garlic, crushed
2 lb. lean ground beef
2 (28 oz) can tomatoes
6 Tbsp butter
2 tsp oregano
2 Tbsp basil
1-2 tsp salt
1 tsp pepper
Lasagna noodles, cooked (at least 9-10 strips)
1 lb mozzarella cheese, shredded
2 cup ricotta cheese
parmesan cheese

Directions:
Directions:
Saute onion, carrot, garlic in olive oil, stirring until lightly browned. Remove, brown the beef, cooking until it loses pink color. Drain off grease. Puree tomatoes in blender or food processor. Add tomatoes to meat/onion mix and simmer 15 minutes. Add butter, oregao, basil, salt and pepper, partially cover, and simmer for 30 minutes. (Note...I prefer at this point to set the sauce aside one day... and assemble the lasagna on day 2.) Preheat oven to 375. Assemble by drizzling some sauce over bottom of baking dish (9x13) Put in a layer of noodles, sauce, ricotta and mozzarella. Make another layer of noodles, sauce and mozz...(note...I put ricotta on bottom layer only). Finish with layer of noodles, sauce, mozz. Sprinkle parmesan chees evenly over the top and bake 20 minutes or untilhot and bubbling.
