Leaf Lettuce
1 pound bacon (reserving the grease)
1/2 cup vinegar
1 cup sugar
1/2 an onion (or 3 or 4 green onions)

Directions:
Directions:
Fry the bacon in a skillet. Take out the bacon, leaving the grease, and add 1/2 cup vinegar and 1 cup sugar. Boil until sugar is dissolved.

Wash and chop lettuce and onions. Shake or pat them dry. Wring lettuce and onions together in bowl. Pour in hot vinegar mixture and stir together.

May have vinegar mixture left over.
* Always put the vinegar in first or the grease will carmelize the sugar.
**Always use twice the amount of sugar versus vinegar.

Wilted Lettuce makes you sleepy.

Ma Sample made this for me as a young boy after I would come inside from cultivating the corn. She would make it early in the spring and all summer when the lettuce was ready. I LOVE it!

I use the leftover vinegar mixture to dip my bread in.
