2 cups sifted cake flour
1 cups sugar
3 teaspoons baking powder
1 teaspoon slat
cup shortening
cup milk
cup maraschino cherry juice
1 teaspoon vanilla
2 teaspoons almond extract
4 egg whites, unbeaten
18 maraschino cherries, well-drained and very finely chopped
cup walnuts, very finely chopped

Directions:
Directions:
Stir flour, sugar, baking powder, and slat into mixing bowl. Add shortening. Combine milk and cherry juice. Add cup of this liquid to flour mixture. Add extracts. Beat 2 minutes by hand or low speed. Add cherries and nuts and blend.

Bake in 2 deep 9 inch greased layer pans in 375 degree oven for 20-25 minutes. Cool. **Bake in heart shaped pan and frost with Pink Valentine Frosting. 2 Tbsp. Shortening, 2 Tbsp. Butter, 1 tsp. Vanilla, tsp almond extract, tsp salt, 4 cups sifted icing sugar, 9 Tbsp milk.
