6 Sliced Zucchini (parboil 5 minutes, drain) or (steam in microwave)
3/4 c. Shredded Carrots
1/2 c. Minced Onion
6 T. Melted Margarine
1 can Cream of Chicken Soup
1/2 c. Sour Cream
2 1/2 c. Cornbread Stuffing Mix w/seasoning

Directions:
Directions:
Heat oven to 350, spray 1 1/2 quart casserole dish with Pam.
Saute carrots and onion in 2 Tbl. butter.
Mix 1 cup stuffing mix and 4 Tbl. margarine in a small bowl and set aside.
Mix zucchini, carrots, onion, 2 Tbl. margarine, soup, sour cream and stuffing mix together and place into casserole dish.
Place reserved stuffing mix on top and bake for 30-40 minutes.
