2 c. Basmati Rice
enough water to boil rice
2 c. sugar
Orange food coloring
2 oranges, sliced (for juice)
3-4 slices pineapple, cut into small wedges
1 stick butter
1-2 cinnamon sticks (for flavoring)
Pistachio nuts for garnish

Directions:
Directions:
Boil rice in Dutch oven with pot full of water. Add few drops orange food coloring when boiling. Once rice is cooked ( squeeze grain to find out), pour rice in colander. Run cold water over rice. In another Dutch oven put sugar and 1/2 cut water on high heat. Add cinnamon stick. It will turn into syrup. Add pineapple and juice from oranges to syrup. Put on medium heat. Add butter. Once melted, add rice. Stir until coated with syrup and until liquid evaporates. Butter should start coming out. Pour in serving dish. Once cool, use fork to loosen. Add sliced pistachio on top for garnish.
