1 (15 1/2 oz) can of chick peas - drained
3 carrots peeled and finely diced
2 stalks celery - finely chopped
1/2 purple onion (bermuda) diced
1/2 cucumber, peeled - seeded - diced
2 T fresh dill - chopped
2 T red wine vinegar or freshly squeezed lemon
2 T extra-virgin olive oil
2 medium tomatoes peeled and diced or 1 cup of cherry tomatoes.
1/2 crumbled feta cheese
Salt and fresh ground pepper, to taste
Pinch of sugar - optional


Directions:

In bowl combine all ingredients except feta, tomatoes and black pepper.
Just before serving add feta, tomatoes, pepper and sugar (optional).
