8 large Baking Potatoes
1 pound Crumbled Bacon
2 1/2 C. Sour Cream
1/2-1 C. Half & Half or Milk
1 C. Butter
1 tbsp. Salt
1 tbsp. Pepper
3+ C. Cheddar Cheese, shredded
8 Green Onions, sliced

Preheat oven to 400. Pierce potatoes with a fork and bake for 1 hour, or until done. Let cool. Cut potatoes in half lengthwise and scoop out the insides into a large bowl. Add sour cream, milk, butter, salt & pepper, green onions, bacon bits, and 2 cups of cheese. Mash well. Spoon mixture into the potatoe skin and top with more cheese. Bake for another 20 minutes or until cheese is melted.
