4 chicken breasts dash black pepper 1 egg 2 tablespoons prepared mustard 1/4 cup Parmesan cheese 1/4 cup bread crumbs 2 tablespoons oil
Sprinkle chicken breasts with salt and pepper. In bowl, beat together egg and mustard. In separate bowl, combine Parmesan cheese and bread crumbs. Dip chicken breasts in egg and then cheese mixture and then allow to set on wax paper for about 10 minutes. Saute in oil on both sides, about 15 -20 minutes total.
