Spanish Sherried Shrimp Recipe

1 tablespoon flour
2 1/4 teaspoon fresh thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound shrimp
1 1/2 cup onion
1 1/2 cups red pepper, chopped
1/3 cup medium dry sherry
1 can whole tomatoes
2 teaspoon sherry vinegar

Combine flour, thyme, salt, and pepper in a large ziplock bag, add shrimp and shake well.

Heat olive oil and add shrimp, saute 3 minutes.

Add onion, red pepper, garlic, sherry, tomatoes, sherry vinegar. Saute then add remaining ingredients and shrimp. Serve with long grain rice, tossed with garlic and almonds.
