1 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
2 eggs
1 c. sugar
1 c. canned pumpkin
1/3 c. + 1 tbsp. canola oil
1/3 c. + 1 tbsp. prune puree (baby food)

Directions:

Whisk flour, baking soda, baking powder, salt and cinnamon together. Beat eggs, oil, prunes, pumpkin and sugar until smooth. Add dry ingredients to wet ingredients just until incorporated. Pour into greased muffin tins (3/4 full). Drop 3 chocolate chips onto each muffin and push them into the center of the batter with a chopstick or skewer. Bake at 350 for 16 - 20 minutes. Let stand for 10 minutes.
