1 lb. sausage
1 16 oz. can baked beans
1 c. barbecue sauce
1 3/4 c. fresh tomatoes, diced
1 1/2 c. celery, diced
1 1/4 c. onions, diced
1 1/4 t. garlic powder
3-4 dashes hot sauce to taste
salt & pepper to taste
Tortilla chips

Garnish options: 3/4-1 c. shredded cheddar cheese; 1/3 c. sour cream; 1/4 c. diced green onions

Directions:
In a lg. skillet or soup pot, begin to brown and crumble sausage over med. high heat. Carefully drain off excess drippings. Add celery & onions to sausage and continue to cook over medium heat until vegetables are slightly tender and sausage is no longer pink. Add baked beans and barbecue sauce, mixing well. Add tomatoes & seasonings to mixture. Simmer together for 5-10 min. and serve in a large bowl (or keep warm in a crockpot). Garnish with cheddar cheese, sour cream, and diced green onions if desired. Serve with tortilla chips. Refrigerate leftovers.
