Eggplant, onions, peppers, tomatoes, cracker crumbs, cheese

Directions:
Directions:
Brown sliced eggplant in olive oil. In a 9 x 13 pan, layer fried eggplant, onions, peppers, tomatoes. Sprinkle tomatoes with salt, pepper, and sugar to neutralize acidity. Bake for 1 hour at 350 degrees, then top with cracker crumbs and cheese. I like mozzerella. Bake for 15 minutes.
