2 - 3 lbs. boneless chicken breast or thigh meat
1 large onion, finely chopped
2 lbs. canned tomatoes, drained
1 tbsp. dried thyme
3- 4 sprigs parsley
1 tsp. salt
1 - 2 cloves garlic, crushed
1/2 tsp. pepper
1 cup chicken stock
olive oil
1/2 c. dry white wine
1 tbsp. butter
2 c. sliced fresh mushrooms

Directions:
Directions:
Cut chicken into pieces; saute along with onion in olive oil. Add tomatoes, chicken stock and wine. Add spices and simmer (covered) for one hour. Melt butter in saucepan and saute mushrooms. Cook until tender. Pour chicken mixture over cooked rice or pasta in individual serving bowls. Garnish with cooked mushrooms and parsley.
