2 eggs, beaten
2 1/4 c. milk
1/4 c. melted butter
2 c. flour
4 tsp. baking powder
2 tbsp. sugar
1 tsp. salt

Directions:
Directions:
Combine eggs, milk and butter in large bowl. Add dry ingredients which have been sifted together. Spoon batter onto hot griddle. Makes about 16 thin pancakes.

When I was growing up, my friend Jean's mother always made the best pancakes. Many years later I stumbled across her recipe in an old church cookbook I found at a yard sale. I've been making them ever since.
