2 tbsp Olive oil 2 lbs Red potatoes 1/2 Med sweet onion chopped 2 tsp Minced garlic 1 tsp coarse salt 1/2 tsp Black pepper 8-10 slices cooked crisp bacon 3/4 c. Prepared ranch dressing
Toss potatoes with oil, onion, salt and pepper. Arrange in a single layer on a 15x12 in. pan coated with cooking spray. Bake at 425º for 35 min or until tender. Toss potatoes with bacon and ranch dressing. Serve immediately.
