4 tbsp. Unsalted butter cut into 4 pieces
2 tbsp. Heavy cream (or milk)
1/2 tsp. Salt
1 tsp. Sugar
2 lbs Sweet potatoes, peeled, quartered and cut into 1/4 inch pieces

Directions:
Directions:
1. Combine butter, cream, salt, sugar and sweet potatoes in large saucepan

2. Cook covered over medium heat, stirring occasionally, until potatoes fall apart when poked with fork (30-45 min)

3. Remove from heat and mash with potato masher

4. Serve immediately
