Zucchini Bread Recipe

3 beaten eggs
2 1/2 c sugar
1 c oil
3 c flour
1 tsp salt
1 tsp baking powder
3 tsp cinnamon
1 tsp baking soda
3 tsp vanilla
2 c grated zucchini with rind
1 c walnuts or raisins

Combine the eggs, sugar and oil. Combine the flour, salt, baking powder, cinnamon, and soda and add to the egg mixture. Add the remaining ingredients. Pour into 2 lightly greased loaf pans (3 small loaves). Bake at 350" for 45-60 minutes.
