2½ oz (65g) butter
2 onions – chopped
4 oz (125g) mushrooms – chopped
1 Teaspoon tomato puree
4 tablespoons white wine
4 tablespoons chicken stock
Chicken breasts

Directions:
Directions:
Sauté mushrooms in 1½ oz butter
Add wine, tomato puree, stock, salt & pepper
Stir until concentrated
Beat and flatten chicken breasts
Place in ovenproof dish
Cover with mixture and bake 40 – 45 minutes @ 220º c
