3 cups cooked and drained penne pasta
1 cup grape or cherry tomatoes
3/4 cup dried cranberries
1/2 cup cashews
1/4 cup red pepper, cut into long stripes
6 to 8 Romaine leaves
1/2 cup Italian dresssing

Directions:
Directions:
In medium bowl, combine pasta, tomatoes, cranberries, cashews, red peppers, and Italian dressing. Add two lettuce leaves that have been torn into small pieces. Arrange remaining leaves in a circle on a large serving platter. Toss pasta mixture together and sprinkle with pepper. Arrange on lettuce leaves.
