Ingredients:  
4 lb. of shrimp uncooked, peeled and devained
1 bunch green onions, finely minced
3 (med.) onions, finely minced
2 cloves of garlic, finely minced
3/4 c. parsley, finely minced
1/2 c. margarine
1 1/2 T tomato paste (use paste to thicken , Ro-Tel to thin)
3 1/2 tsp. salt, start with a little - add to taste
Tabasco and Cajun seasoning to suit taste

Peel and devain shrimp. Saute veggies in margarine . Do not brown. Add paste. Stir well. Cook for a few min. Add shrimp and seasonings. Cook for 20 min. (do not over cook or shrimp will be mushy). Thicken slightly with corn starch added to water to make a paste. (or tomato paste as needed) - If it is to thick you can use Ro-Tel to thin to desired consistency.
