6 lg. fresh carrots
1 T. olive oil
1/2 tsp. coarse salt
1/2 tsp. fresh ground pepper

Directions:
Directions:
Heat carrots in a pan with a small amount of water until boiling. Lower heat and simmer a few minutes until carrots are semi-cooked yet still firm. Drain and cut each carrot crosswise in half. Rub each piece with olive oil and sprinkle with salt and pepper. Place on grill about three inches from medium coals or gas. Grill four minutes, turning occasionally until lightly charred.
