1/2 chunk yeast
1/2 c warm water
1 tsp sugar
2 c milk, scalded
4 T sugar
2 T salt
4 T lard
1 tsp caraway seed
2 c rye flour
2 c wheat flour

Directions:
Directions:
Soak yeast, warm water, and sugar, set in a warm place.

Add sugar, salt, lard, and caraway seed to scalded milk.

When cool, put in yeast mixture. Then add 2 c rye flour and the rest wheat flour. Knead 8 to 10 min. Let raise 1 1/2 hours. Punch down. Let raise 1/2 hour. Put on board, shape in loaves. Let raise 45 min.

Bake at 400 degrees for 1/2 hour. Reduce heat to 375 for 1/2 hour.
