Ingredients:
1 1/4 c. all-purpose flour
1/2 c. powdered sugar
2 tsp. instant coffee granules (optional)
2/3 c. butter or margarine, softened
1/2 tsp. vanilla extract
2 c. semisweet chocolate morsels, divided in half
Vanilla ice cream (optional, but delicious =)

Directions:
Directions:
Put on your favorite dancing song. This is crucial.

Preheat oven to 325 F.

Combine first 3 ingredients in a medium mixing bowl; add butter and vanilla, & beat at low speed with an electric mixer until blended. This dough takes a while to smooth out, don't jump the gun or the shortbread won't be at its delectable best =). Stir in 1 cup of the chocolate morsels. Press dough into an ungreased 9-inch square pan; prick with a fork to make pretty designs!! Bake at 325 for 20 minutes or until lightly browned.

KITCHEN DANCE!! Air guitar encouraged.

Sprinkle remaining 1 cup morsels over the top of the warm shortbread, and spread to cover as the morsels melt. Cut shortbread in pan into about 25 squares, then cut each square into 2 triangles. Let cool slightly in pan before removing. Serve warm with vanilla ice cream.

These can be microwaved to reheat later on, just make sure that the chocolate is melted before you eat.
