1 Tbsp lemon juice
2 lbs large shrimp, peeled and deveined
Cooking Spray
1 tsp olive oil
1/2 cup chopped onion
1/2 tsp minced garlic
2 Tbsp clam juice
1 Tbsp white wine
1/2 tsp dried oregano
1/4 tsp pepper
1 14.5 oz can diced Italian style tomatoes
1 cup crumbled feta cheese
2 Tbsp chopped fresh basil

1. Preheat oven to 450
2. Combine lemon juice and shrimp in a large bowl; toss well. Heat a large non-stick skillet over medium-high heat. Coat a pan with cooking spray. Add oil to pan. Add onion to pan and cook for 2 minutes. Add garlic, cook an additional minute. Add clam juice, wine, oregano, pepper and tomatoes; bring to a boil. Reduce heat, and simmer 5 minutes. Stir in shrimp mixture. Place mixture in an 11 x 7 inch baking dish. Sprinkle cheese over mixture. Bake for 10 minutes or until shrimp are done. Sprinkle with basil and serve immediately.
