1 Egg, Beaten
1 c. Sugar
1/2 tsp. Vanilla

Directions:
Preheat Oven to 350. Mix all ingredients together, form into Tablespoon-sized Balls, arrange on cookie sheet and flatten with fork dipped in sugar in criss-cross pattern. Bake 10 minutes until set but not browned for soft cookies.

Vena's neighbor and friend, Barb Dalke, gave us this recipe when the kids were little ... it is very easy and delicious and great for those that are Gluten-intolerant. Keep well and freeze well if there are any left. Jan says "sprinkle them with Cinnamon-Sugar".
