1 & 1/2 c flour
1 &1/2 c beer, either cold or warm
3 very large Bermuda onions
3 to 4 cups shortening

Combine flour and beer in a large bowl, blend throughly, using a whisk. Cover the bowl & allow the batter to sit at room temp for no less than 3 hours.
20 minutes before the batter is ready, pre heat the oven to 200. Place brown paper or paper toweling on a jelly roll pan.
Peel away the papery layer of the onion, and slice into 1/4" slices, separate into rings and set aside.
Melt enough shortening or use peanut oil to come 2' up the side of a 10-inch skillet. Heat until 375
