5 cups ground green peppers ("Mangoes") 4 cups ground green tomatoes 4 cups ground onion 1 1/2 cups ground red peppers 1/4 cup salt 6 cups sugar 4 cups cider vinegar 2 cups water 2 Tbsp. mustard seed 1 Tbsp celery seed 1 container (1.75 ounce) pickling spice (I just use whole cloves and all spice in a bag) green food coloring
Combine green and red peppers, onion and tomato. Add salt, sugar, vinegar, water, mustard seed and celery seed. Wrap pickling spice in a piece of cloth ( will be discarded later) add it to mixture while boiling. Simmer until it changes color, about 1/2 an hour. Add Green food coloring fro appearance. Can in sterile jars.
