2 lbs. sweet potatoes or yams
2 tsp orange rind ( grated)
1/4 tsp nutmeg
1/2 tsp salt
1/4 tsp ground white pepper (or you can use black)
1/2 cup brown sugar
2 Tbsp butter
1 Tbsp lime juice
3 Tbsp dark rum

Directions:
Directions:
Bake sweet potatoes or yams in 400 degree oven for about an hour.  If you are pressed for time, use the microwave - it takes about 10-15 minutes.  Peel and slice into a shallow 10 inch round baking dish.  Arrange the slices in 2 layers, sprinkling orange rind, nutmeg, salt and pepper over each slice. 
Over medium low heat, heat brown sugar, butter, lime juice, and rum until sugar is dissolved.  Pour over potatoes.  Bake 40 minutes, brushing glaze over the potatoes every 10-15 minutes.  Let stand for 10-15 minutes after removing from oven to allow potatoes to absorb the glaze.

This is a recipe from a friend of mine actually - Joni Myers.  We have had this at a couple of Thanksgiving get-togethers and I think it is a wonderful recipe for sweet potatoes.
