2 1/2 Pounds Potatoes
1 Stalk Celery, Diced
1/3 Cup Sweet Pickle Relish or 1/2 Cup Chopped Sweet Pickles
2 Boiled Eggs, Sliced
2 Green Onions, Chopped
1 Cup Mayonnaise
2 Tablespoons Lemon Juice
Salt and Pepper to Taste

Directions:
Directions:
Boil potatoes until tender. Drain and cool slightly. Combine potato, celery and next 3 ingredients in a large bowl. Toss gently. Combine mayonnaise, next 3 ingredients and mustard (if desired) in a small bowl. Spoon mayonnaise mixture over potatoes and toss gently to combine.
