2 lbs. white potatoes
peanut oil (for frying)

Directions:
Directions:
Peel potatoes. Wash and cut in pieces 2 1/2 inches long and 1/2 inch wide. Rinse in cold water and dry. Heat oil in deep fryer to 350. Add potatoes and fry (in batches) until pale straw color. Drain on paper towel. When all of potatoes are cooked fry again in 350 oil until potatoes are golden brown. Keep potatoes warm in oven until ready to serve. Sprinkle with salt and pepper.
