Cookie Dough:
1/2 c. shortening
1 c. brown sugar (packed)
1 egg
1/2 tsp vanilla
1 3/4 c. all-purpose flour
1/2 tsp soda
1/4 tsp salt

Date-Nut filling:
3/4 c. chopped pitted dates
1/3 c. sugar
1/3 c. water
1/2 c. chopped walnuts

Directions:
Directions:
Mix shortening, sugar, egg, and vanilla. Sift dry ingredients together. Stir into shortening mix. Form into a roll 2 1/2 " across. Chill until firm. Cook filling until slightly thickened, cool, and add nuts.
Divide dough in half and roll each into an 11 X 7 rectangle. Spread dough with date-nut filling. Roll Jelly-style and chill sever hours.
Pre-heat oven to 400 degrees. Cut into 1/4 " slices and place on un-greased cookie sheet.
Bake 8 to 10 minutes or until light brown. Cool on a rack.
