2 egg yolks
1 3/4 c water
2 tbsp sugar
2 tsp instant coffee
1 envelope unflavored gelatin
1/4 tsp salt
1 tsp vanilla
2 egg whites
1/4 c sugar

Directions:
Directions:
In the upper half of a double-boiler, beat the egg yolks. Stir in the water. In a cup, combine the sugar, unflavored gelatin, instant coffee, and salt. Stir into the egg yolks. Cook over boiling water, stirring constantly, until gelatin is thoroughly dissolved. Remove from heat and add vanilla. Chill until syrupy.
In a bowl, beat egg whites until foamy. Gradually beat in sugar until a satiny meringue forms. Fold into syrupy mixture, carefully, using cut and fold with a rubber spatula. Transfer to a rinsed mold or 6 dessert cups. Chill until set.
