2 c. panko bread crumbs
3 eggs
salt and pepper
2 lbs. halibut or any firm white fish
8 corn tortillas
1/2 head napa cabbage, shredded
1 1/2 c. mayonnaise
1 1/2 c. sour cream
2 chipotle peppers in adobo
Juice of 1/2 lime

Directions:
Directions:
To make pink chili mayonnaise, put mayo, sour cream peppers, lime juice, salt, and pepper in a food processor and blend until smooth. Refrigerate for 1/2 hour to let flavors blend.

For the fish, heat oil to 375. While oil heats put the bread crumbs into a shallow dish. Break the eggs into another dish. Season with salt and pepper and beat with 2 tbsp. water. Cut the fish into 1 inch strips. Dip them into egg then coat well with bread crumbs. Set aside to rest for 10 minutes. Fry fish until golden brown and drain on paper towels.

Serve with pink chili mayo, tortillas, and shredded cabbage.
