2 lb. ground chuck beef 2 Tbsp. Morton's tender-quick salt 1 c. water 1/2 tsp. garlic salt 2 tsp. cracked black pepper 2 tsp. mustard seed 1 tsp. liquid smoke 1 Tbsp. brown sugar
Mix spices together with beef and water. Divide into 3 rolls; wrap in saran wrap. Refrigerate 24 hours. Remove saran wrap and bake on a rack placed on a cookie sheet, for 1 hour at 300 degrees. Beef stick will turn a bright red. Let cool. Wrap in foil and store in refrigerator or freezer.
