2 medium tomatoes, diced
1/4 cup each Yellow, Green and Red Peppers, diced
1/4 cup red onions, diced
1 clove garlic, minced
2 tbsp olive oil
2 tbsp Lime Juice
1 tbsp White Wine Vinegar
1 tsp sugar
dash hot pepper sauce
1 tbsp minced fresh basil or 1 tsp dried
1 tbsp minced fresh dill or 1 tsp dried dill weed
3/4 tsp minced fresh thyme or 1/4 tsp dried
1 large avocado

Combine all ingredients except avocado.
Cover and refrigerate.
Just before serving, add chopped avocado.
Stir and serve. Can be served with chips, or as a topping for chicken or fish.
Yields 3 1/2 cups.
