Sauce:
1 large can of tomato paste
1/4 cup sugar
3/4 quart tomato juice
1 clove garlic browned in 1/4 cup butter/margarine, then remove garlic
Filling:
1 package frozen chopped spinach
3 T butter/margarine
1 clove garlic
8 oz cream chees
1 egg
1/4 teaspoon nutmeg
pinch of parsley flakes

1 box of dried manicotti

Directions:
Directions:
Mix all of the ingredients for the sauce together in one mixing bowl. Cook the spinach in butter and add a clove of garlic. Once the spinach is cooked, remove the garlic. Mix the cream cheese, egg, nutmeg, and parsley flakes together and add to the spinach mixture. Boil the manicotti. Cool the manicotti by running cool water over the cooked manicotti. Fill each manicotti with 1 teaspoon of the spinach/cheese mixture. Layer in a baking dish with sauce and bake 45 minutes at 350 degrees.
