3 eggs
1 c oil
2 c sugar
2 c grated peeled zucchini
1 tbsp vanilla
3 c flour
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
1 tbsp cinnamon
1/4 tsp nutmeg
1 c chopped nuts

Directions:
Directions:
Blend eggs, oil, sugar , zucchini and vanilla in large mixing bowl. Combine dry ingredients & nuts, stir into zucchini mixture. Pour into 2 greased & floured loaf pans. Bake in 350 oven until golden brown about 60 to 75 minutes. Cool 5 minutes before removing from pan. Cool on wire racks.
