Flour tortillas
Olive oil
Onion, thinly sliced
Fresh mushroom, sliced
Green or black olives, sliced
Grated cheese

Directions:
Directions:
In a frying pan, saute the onion and mushroom over a medium-high heat in olive oil until cooked. Remove the onion and mushroom to a plate with a paper towel to drain the grease. Reduce the heat and then place a tortilla in the pan coated with olive oil. Sprinkle it with the desired amount of grated cheese and top with the desired amount of onion, mushroom and olives. Cook until it is a golden, crispy brown. Fold in half and remove from pan. Repeat this step until you have made the desired number of quesadillas. Serve with any of the following: sliced tomatoes, sour cream, salsa or lettuce.
