1 pound ripe Italian plum tomatoes
2-3 cloves of garlic, crushed
2 tbsp olive oil
1 tsp salt
2 tbsp fresh chopped basil
1/4 pound grated parmesan or mozarella cheese

French baguette bread, toasted w/ parmesan

Directions:
Directions:
Wash, seed and chop tomatoes. Mix oil, salt, basil, garlic and grated parmesan with tomatoes. Refrigerate at least 2-3 hours before serving. Let stand at room temperature briefly before serving.

When ready to serve, slice, lightly butter and sprinkle canned parmesan cheese on top of bread. Toast lightly.

Serve bruschetta on bred.
