1 large egg white 1 c skim milk 1 c self-rising flour 1/2 c yellow or white cornmeal
Preheat oven to 400 degrees. Slightly beat egg white with a fork. Add milk and mix well. Combine flour and cornmeal. Add liquid mixture into the dry ingredients. Mix briefly with a fork. Oil muffin pans lightly. Bake at 400 degrees for 15 to 20 minutes until golden brown.
