1 pkg. (4 serving) Jell-o brand gelatin
2/3 c. boiling water
2 c. ice cubes
1 container (8 oz.) Cool Whip, thawed
Fresh or canned fruit (1 c. diced strawberries, orange sections, fresh peaches; or 1 can 8 oz. apricots, sliced peaches or pears, drained and diced)
1 prepared 8- or 9-inch graham cracker crust

Dissolve gelatin completely in boiling water. Add ice cubes and stir until gelatin is thickened; remove any unmelted ice. Using wire whisk, blend in whipped topping; whip until smooth. Fold in fruit; chill if necessary, until mixture will mound. Spoon into pie crust. Chill 2 hours.
