1/2 c. cider vinegar
1/2 c. sugar
1/2 c. oil
1 can pinto beans
1 can black-eyed peas
1 can corn

3-4 stalks of celery, diced
1 onion
1 bell pepper

Directions:
Directions:
Boil vinegar, sugar & oil until sugar is dissolved.
Drain the beans, peas & corn and place in large mixing bowl. Add celery, onion & bell pepper.

Add boiled liquid to the rest of the ingredients, cover, and marinate overnight. Drain before serving. Add cilantro - optional. Serve with tortilla chips.
