2 cornish hens
1/2 c. chopped onion
1 T. olive oil
1 c. ricotta cheese
1/3 c. chopped parsley
1/2 t. dried basil leaves
1/2 t. salt
1/3 c. grated parmesan
1 egg, beaten
2 slices bread, crumbled
1/4 c. minced ham or pepperoni (optional)

Remove giblets from hens. Rinse inside and out. Pat dry and set aside.
In a small skillet, saute onion in oil until soft. In a bowl, combine the sautéed onion, ricotta cheese, parsley, basil, salt, parmesan cheese, egg, bread and ham or pepperoni, if used.
Stuff the hens. Close with a skewer or toothpick. Tie the legs together. Rub hens with olive oil and place breast up in roasting pan. Roast at 350º for 1 hr and 15 minutes.
Remove trussing strings and skewer. Slice each hen in half to serve.
