2 cups self-rising cornmeal mix
2 eggs
1/3 cup oil
1 3/4 cup buttermilk
Enough bacon to cover the sides and bottom of a 9-inch cast iron skillet.

Directions:
Directions:
Cover bottom and sides of skillet completely with sliced bacon. Mix other ingredients in order given and pour over bacon. Bake at 425 for 45 minutes.
