4 boneless skinless chicken breast halves
1 egg
1 C crushed butter flavored crackers (about 25 crackers)
¾ tsp salt
½ lb fresh muchrooms sliced (I omit this)
2 T. butter – divided
4 slices ham or salami
4 slices swiss cheese

Directions:
Directions:
Flatten Chicken to ¼ inch thickness (I don’t do this)
In 1st bowl-beat eggs. In 2nd bowl-combine crumbs & salt.
Dip chicken in egg, then in crumbs; set aside.
In large ovenproof skillet, sauté mushrooms in 1 T. butter until tender,
Melt remaining butter. Add chicken, cook over medium heat
For 3-4 minutes per side. Top with ham, mushrooms & a cheese slice.
Broil 4 inches from heat 1-2 min or until cheese is melted.
I don’t broil it I continue to bake until cheese is melted.
