1/4 c. olive oil
1 lb. fresh mushrooms
1 bag of spinach, stems removed
Parmesan cheese

Directions:
Directions:
In a large pan, heat olive oil over medium heat. Saute fresh mushrooms until there is no liquid. Remove mushrooms from pan. Add the spinach, turn heat to high and cook stirring and tossing until wilted, about 5 minutes. Return mushrooms to pan and mix in with the spinach. Then top with Parmesan cheese. Serve immediately.
