1 cup sugar
1 cup flour
1/4 cup pineapple juice
3 egg yolks
1 tsp baking powder

Directions:
Directions:
Beat egg yolks very light. Add the white sugar slowly with pineapple juice. Mix, add flour with baking powder & beaten 3 egg whites.
Melt 2 T butter in pan ( I use cast iron frying pan) add 1 Cup brown sugar, arrange sliced pineapple in form of a wheel. Whole slice in center and around outside with cherries in center of each pineapple; cover with sponge batter. bake 325 for 45 minutes
