1 C peanut butter
1/2 C butter, softened
1 1/4 C brown sugar
1 C granulated sugar
3 eggs
2 tsp baking soda
1 tsp vanilla extract
4 C quick-cooking oats
1 C M&M's
1/2 C butterscotch chips
1 C milk chocolate chips
1 C salted peanuts
2 C all-purpose flour

In a large bowl, cream together peanut butter, butter and sugars. Add eggs, one at a time, beating well. Add baking soda and vanilla. Add oats, M&M's, butterscotch & chocolate chips & nuts. Let stand for 10 minutes. Stir in flour (the dough will be very crumbly). Shape 1/4 cupfuls into balls. Place on greased baking sheets. Gently flatten cookies. Bake at 325 for 15-18 minutes or until edges are lightly browned. These are better under cooked than over cooked! Cool on wire racks.
